The loaves i make are not soudough loaves. Sourdough is very difficult to master and unfortunately, tends to be people’s first foray into breadmaking. I am convinced that this is why more people my age do not make bread on the regular. Sourdough is hard and can be quite frustrating. I mostly just want to eat toast that tastes good. I may attempt to learn sourdough in another few years, but I have learned that there are so many other techniques to master.

Working with High Hydration Dough

The bread that I make is very high hydration which can be difficult to work with. If you do not have a lot of counterspace it can be quite the situation to work with.

At first, when I was developing this, I used flour on my work surface, but this tended to make more of a mess than it helped. When you’re working with more than 50% hydration dough, it’s better to wet your tools and hands.
